Great gluten free baking mix January 6, 2009
Pamela's Baking and Pancake mix is a great gluten-free mix! I've tried several other mixes from our local health food/organic stores - Whole Foods and Trader Joe's - and Pamela's is by far the best. I've made several of the recipes listed on the bag of mix and so far the absolute best recipe is the pancakes! I throw some blueberries into the pancake batter, which helps to make the pancakes tasty, light and airy - they don't give you that "stuffed" feeling after eating them. My husband and I believe these pancakes are better than the flour versions. Pamela's Wheat Free Bread mix is good, too - makes a nice loaf of sandwich bread. Thanks Pamela's!!

Wonderful product for our family January 6, 2009
Over the holidays, we were fortunate enough to have all three of our daughters return home - from St. Paul, Memphis, Tennessee, and Dar es Salaam, Tanzania. Two daughters are restricted to a glutin-free diet, and this flour enabled everyone to enjoy pancakes, scones, waffles, and biscuits without worry. All recipes worked well and the food tasted wonderful! Thank you, "Pamela," for eliminating a significant menu problem for our family.
WOW! This is Great! January 4, 2009
We have stuggled for 9 mos. trying to feed my daughter and her first child a gluten free diet due to a gluten allergy with him. Then we tried Pamela's Baking Mix. This stuff is great, doesn't taste "green", stays moist, doesn't crumble. In other words it is NOT like any other product we have tried. It is so close to "normal" that my very picky son didn't know what he was eating until he caught my smile and then even he had to admitt that it was great. The recipes on the back are wonderful. At Christmas I used my great-grandmothers measurements and Pamela's to make our Christmas Date cake. It was the best version of this cake I have made in 50 years.

I love this flour! Great for use in many things. My family can't believe it's gluten free.
